Get in my mouth!
That’s what you’ll be saying while you’re smelling this chicken baking in the oven.
The best part? In less than an hour total, it will be!
The cornerstone of optimal health and wellness is what you’re eating. Sorry. You can do all the workouts, you can meditate, you can take epsom salt baths six times a day, you can think happy thoughts and journal and do all the other positive practices that help with achieving your goals—but if you are eating crap, you’re going to feel like crap. If you ARE doing all of those other things you might not feel AS crappy, but you still won’t feel AMAZING. And you deserve to feel AMAZING.
I know you want to feel amazing. How do I know this? Because we all want to feel amazing. That’s why you can probably name at least three friends of yours who are currently trying to get you to sign up for their shake program that promises you more energy, more nutrition, more muscle, more vitality…more of everything! And it’s even cheaper with auto-ship. Am I right?
And maybe you will feel a bit better, as long as you stick with it and follow the other aspects of the program. But you probably won’t stick with it long-term. You have good intentions. You WANT to feel great, you WANT to look great, you WANT all the things that program is promising you. But eventually you will want real food. And you’ll start skipping a shake here and there and eating something else instead. And then before you know it, you have (another) can of powdered food in your pantry collecting dust and taunting you.
I have a better idea. It’s pretty revolutionary. It’s actually kind of subversive. Are you ready?
EAT REAL FOOD THAT YOU COOKED YOUR OWN DAMN SELF!!!!!
Yeah, I just shouted that.
That’s how strongly I feel about this.
I know you’re busy. And you don’t want to have to do a ton of prep work and follow complicated directions and learn new fiddly techniques. That’s why all of these services are popping up to take the work out of putting a meal on the table. You know what I’m talking about. You see the ads on Facebook, and I bet a friend has a coupon to share to get you started. And that’s great. Well, maybe not great, but it’s a start. Anything that gets people cooking and eating at home is a plus in my book.
But with this recipe I’m giving you today, you’ll have dinner on the table in under an hour and you don’t need to open a UPS package or learn anything new. Seriously. Unless you don’t know how to turn on your oven, you’re golden. If you DON’T know how to operate your oven, please take a look at the manual and then make this recipe. It’s totally worth the 10 minutes of finding the manual and flipping to the How To page.
I made this last night, and I wish I had doubled the recipe. That’s how good it is. It’s also perfect if you’re following a low carb/high fat diet. If you aren’t doing lchf, you can still incorporate this into your daily diet since we know that dietary fat doesn’t make us fat. Seriously, eat some fat. You’ll feel better. And then go for a walk after dinner. You’ll feel pretty close to amazing.
Smoky Chicken Paprikesh
4 Chicken Thighs Skin-on Bone-in
2-3 Tbsp Smoked Paprika
1 tsp garlic powder
1 tsp onion powder
Himalayan Pink Salt to taste
Black Pepper to taste
1/2 c. Full Fat Sour Cream
Preheat Oven to 400 F
Mix the spices together on a plate and dredge each chicken thigh in the mixture. Don’t be skimpy. You want a nice crust of spices on each piece.
Place the thighs, skin side up, into a heavy ovenproof pan. I used my trusty cast iron skillet. Don’t put any oil in the pan, the chicken fat will render out as it cooks.
Bake for approximately 40 minutes (ovens vary in temperature accuracy) or until the meat is cooked through.
Remove from oven and place chicken on a plate and keep warm.
Using a whisk, quickly stir the sour cream into the pan, scraping up all the crispy bits stuck to the bottom of the pan. Once the sauce is smooth and warm, plate your chicken and either top with the sauce or serve the sauce alongside the chicken for dipping your veggies and each bite of chicken.
No kidding, it’s that easy. And ohmygawd is this delicious. I want this everyday. And I bet you will too.
A couple quick tips: if you can, try to get pastured chickens. They taste better. Use real sour cream, none of that low-fat stuff. Don’t drain the chicken fat from the pan— you need that to really make the sauce smooth and silky and extra yummy. If you want to get fancy, you could deglaze the pan with a little white wine and then add the sour cream.
Who needs a shake or a meal-in-a-box, when you can put this on the table in less than an hour?
